My daughter just had a Pinkalicious party for her 6th birthday and we thought that pink popcorn would be a fun treat. I think we found this recipe on ourbestbites.com. You can use any flavor or color of Jell-O you would like. We used strawberry. If you prefer a milder flavor (like me) just use about half of the Jell-O. If you like a strong fruity flavor use the whole thing. Enjoy!
Jell-O Candy Popcorn
Ingredients:
About 10-12 cups of plain popped popcorn
1/4 cup butter
4 tbsp light corn syrup
1/2 cup sugar
1 (3oz) box Jell-O, any flavor (not sugar-free)
Directions:
1. Preheat oven to 300 degrees F. Line 2 cookie sheets with foil and spray lightly with cooking spray. Set aside.
2. Place popcorn in a very large mixing bowl and set aside.
3. Put corn syrup and butter in a small sauce pan over medium heat. Stir until butter is melted. Add sugar and Jell-O and mix well. After the mixture boils turn down the heat and let it simmer for 5 minutes, stirring constantly so it doesn't burn to the bottom of your pot.
4. Immediately pour over the bowl of popcorn. BE CAREFUL! It's VERY HOT! Mix right away and stir until all of the popcorn is evenly coated. Spread evenly onto the 2 cookie sheets.
5. Bake in the preheated oven for about 15 minutes. After it cools to room temperature break it into pieces and enjoy!
**If you want to make popcorn balls, skip the baking and just form it into balls immediately after mixing it but don't get burned!**

Cookie Bouquets!
Valentine's Day is coming up soon and here is a cute, affordable, and creative gift you can make for someone. It's really pretty simple and people always love them! It works for any holiday!
Cookie Bouquets:
Cookie Ingredients:
2 cups butter, softened
3 cups sugar
4 eggs
2 tbsp vanilla (or 1 tbsp vanilla and 1 tbsp of another flavor)
2 tsp baking powder
1 tsp salt
6-7 cups flour
bamboo skewers
Directions:
Mix dry ingredients in a large bowl. Cream butter and sugar in large mixing bowl. Add eggs and vanilla and mix well. Gradually add dry ingredients, mixing well after each addition. Place dough in the refrigerator for about 3 hours to make it easier to handle.
Roll out dough at least 1/4 inch thick. Cut with desired cookie-cutter shapes. Place about 4 cookies on a cookie sheet and insert skewers, pointy end first, about halfway into the cookie. Bake cookies at 350 degrees for 10-12 minutes or until edges start to turn golden brown. Cool on the cookie sheet! If you try to move them before they are cool you will pull the skewer out!
When the cookies are completely cool, remove them from the cookie sheet and decorate with a powdered sugar glaze.
Glaze Ingredients:
1 cup powdered sugar
2 tsp light corn syrup
2 tsp milk
1/4 tsp vanilla or other flavoring
food coloring
Directions:
Mix all ingredients in a small bowl. Ice cookies with glaze to give them a polished and professional look. Decorate as desired.
To make the bouquet:
1. Wrap each cookie in plastic wrap or use clear treat bags, tying ribbon around the bottom of each cookie.
2. If you want to use a vase you just need to fill it with decorative rocks to weigh it down. If you use a basket you need to put rocks in the bottom for weight, place green floral foam on top of the rocks, and then cover the green foam with decorative straw or paper so it looks nice.
3. Arrange the cookies any way you want, cutting some skewers shorter than others to create a better bouquet look.
4. Tie a ribbon around the vase or basket to finish it off and you're done!

Halloween Cupcakes!!!
I just finished making a bunch of Halloween cupcakes for my girls' dance classes today. I think they turned out super cute! I thought I would put some pics on here just in case anyone is looking for some Halloween cupcake ideas :o) Happy Halloween!

Easiest Caramel Corn EVER!!
Easiest Caramel Corn Ever:
Ingredients:
3 quarts popped popcorn (I prefer mine to be plain with no salt or butter)
1 cup packed brown sugar
1/2 cup butter
1/4 cup light corn syrup
1/2 tsp salt
1 cup unsalted peanuts, optional
1/2 tsp baking soda
Directions:
Put popcorn in a brown paper bag you get from the grocery store; set aside. Combine sugar, butter, corn syrup, salt, and nuts in a 2-quart microwave safe glass bowl. Microwave on high for 3-4 minutes, stirring after each minutes, until it comes to a full boil. Microwave 1-1/2 minutes more. Stir in baking soda and pour into paper bag over the popcorn. Close bag and shake well. Microwave for 1 minute. Shake well. Microwave for 1 minute again and shake well, making sure the popcorn is evenly coated. Pour onto foil sheets and spread out with a wooden spoon to cool. Enjoy!
***By the way, if you want your caramel corn to taste like Cracker Jack you replace about 1/3 of the corn syrup with molasses.***

LEGO Birthday Cake
Just on a quick side note, I have been a little busy this last week getting things ready for my son's birthday party this weekend so I haven't done any fun recipes this week. However, I did make him a LEGO cake for his birthday party that was really fairly easy to put together and he absolutely loved it! I just made it out of a cake I baked an 11x15 pan. I cut it into thirds and then cut a couple inches off the end and put all the pieces together to make the cake I wanted. I used big marshmallows cut in half for the little bumpy things on top, which worked really well. It was a lot of fun! I also made a LEGO pinata out of a cardboard box and plastic cups, and LEGO-shaped candies too. Everything turned out great! If you want to do a LEGO party for your kiddo I'd be happy to share some ideas with you :o)
