Grilled Peach Sundaes!!!



Looking for a great dessert to go with your fabulous grilled dinner???  Try a grilled peach sundae.  These are really easy to make and oh soooo good! 

Grilled Peach Sundaes:

Ingredients:

1 peach per person, cut in half and pit removed
olive oil or cooking spray
honey
cinnamon sugar
vanilla ice cream

Directions: 

Brush each peach half with olive oil on all sides or spray with cooking spray.  Grill over medium heat for about 3-5 minutes per side or until heated through and soft.  Remove from grill and immediately drizzle with a little bit of honey and sprinkle with cinnamon sugar.  Top each half with a scoop of vanilla ice cream and sprinkle more cinnamon sugar on top.  That's it! 

**You can also top it with blueberries, strawberries, whipped cream, or chopped nuts.  Just go crazy!**

Bacon Cheeseburger Bundles

These are another kid favorite!  These are especially nice in the wintertime when you don't want to grill outside.  Velveeta isn't something I always have on hand because I don't like it so I have substituted grated cheddar or colby jack cheese instead and it works great!  Dip in ketchup or BBQ sauce.  YUM!

Bacon Cheeseburger Bundles

Ingredients:
BREAD:
4-1/2 tsp yeast
2/3 c warm water
2/3 c warm milk
1/4 c sugar
1/4 butter, softened
2 eggs
2 tsp salt
4-1/2 to 5 cups flour

FILLING:
1 pound sliced bacon
2 pounds ground beef
1 small onion, chopped
1-1/2 tsp salt
1/2 tsp pepper
1 pound Velveeta cheese (cubed)
4 tbsp butter, melted

Directions:
1)  If you have a bread machine, layer the bread ingredients in your bread machine and run the dough cycle.  If you don't have a bread machine you'll have to do it the hard way ;o) :

In a large bowl, dissolve the yeast in warm water.  Add the milk, sugar, butter, eggs, salt, and 3 1/2 cups flour.  Beat until smooth.  Stir in enough remaining flour to form a soft dough. 
Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes.  Place in a greased bowl, turning once to grease top.  Cover and let rise in warm place until doubled, about 1 hour.

2)  Meanwhile, in a large skillet, cook bacon until crisp.  Drain on paper towels.  Cook the beef, onion, salt, and pepper until meat is no longer pink; drain.  Add bacon and cheese; cook and stir until cheese is melted.  Remove from heat.

3)  Punch dough down.  Turn onto a lightly floured surface; divide into fourths.  Roll each portion into a 12 x 8 inch rectangle.  Cut into six squares.  Place 1/4 cup of the meat mixture in center of each square.  Bring corners together in the center and pinch to seal. 

4)  Place 2 in. apart on greased baking sheets.  Bake at 375 degrees for 10-12 minutes or until lightly browned.  Brush with melted butter.  Serve warm with ketchup or BBQ sauce if desired.

Frozen Strawberry Sensation

Here is a very tasty, very simple summertime treat!  It tastes almost like strawberry ice cream but it's a lot easier to make.  I usually top mine with sliced strawberries, but somehow my extra strawberries disappeared while this was in the freezer...at least that's what the kids tell me.  Enjoy!

Frozen Strawberry Sensation

Ingredients:

2 cups fresh strawberries
1 can (14 oz.) sweetened condensed milk
1/4 cup lemon juice
1 tub (8 oz.) Cool Whip, thawed, divided
16 Oreo cookies, crushed
2 tbsp melted butter

Directions:
Line 8x4-inch loaf pan with foil.  Mash the strawberries in large bowl.  Stir in condensed milk, lemon juice, and 2 cups of the Cool Whip.  Pour into the pan.

Combine crushed cookies and butter.  Gently press on top of the strawberry mixture.  Cover.  Freeze at least 6 hours.

To serve, invert onto plate.  Gently peel off foil.  Frost with remaining Cool Whip.  Top with additional sliced strawberries.

Blueberry Almond Coffee Cake

This is a delicious blend of blueberry and almond!  It's sweet enough for dessert but not too sweet for breakfast.  Plus it's very simple to throw together, which makes it that much better!

Ingredients:

1 cup all-purpose flour
1/2 c sugar
3/4 tsp baking powder
1/2 tsp salt
1/4 tsp baking soda
1 egg
2/3 cup buttermilk
2 tbsp melted butter
1 tsp vanilla extract
1/4 tsp almond extract
1 cup fresh or frozen blueberries, divided
1/2 cup sliced almonds
1 tbsp brown sugar
1/4 tsp ground cinnamon

In a large bowl, combine the flour, sugar, baking powder, salt, and baking soda.  In another bowl, whisk the egg, buttermilk, butter, and extracts until blended.  Stir into the dry ingredients just until moistened.  Stir in 2/3 cup blueberries.

Pour into a greased 8-inch square baking dish.  Top with remaining blueberries.  Combine the almonds, brown sugar, and cinnamon; sprinkle over the top.  Bake at 350 for 25-30 minutes or until a toothpick inserted near the center comes out clean.  Cool on a wire rack.

Note:  If using frozen blueberries, do not thaw before adding to the batter.

Homemade Hot Pockets

I have to admit sometimes my kids can be a real pain to feed!  If one of them likes something it's guaranteed that another one hates it.  It's hard to find something that will please everyone but this usually works.  The kids think these are fun to make and they can pick whatever meat and cheese combination they want.  Sometimes we have put our favorite pizza toppings inside too.  They are pretty easy and a lot better than the ones you buy in the store.  I believe the one in the picture was turkey and provolone. 



Ingredients:



Meat of your choice (roast beef, turkey, ham)
Cheese of your choice (cheddar, provolone, Swiss)
Melted butter

Bread dough:

1 c lukewarm water
2 tbsp softened butter
1 egg
3 1/4 c flour
1/4 c sugar
1 tsp salt
1 tbsp yeast

Dissolve yeast in water and set aside.  Mix butter, egg, salt, and sugar.  Add yeast mixture and mix well.  Add flour a little at a time.  Knead for 10 minutes and let rise until double.  (Or you can simply toss it all in your bread machine and let it do the work for you).

Divide the dough into 8-10 balls.  Roll each ball into a rectangle.  Place meat and cheese on one side and fold in half sealing the edges.  Place on a cookie sheet and allow to rise for 20-30 minutes.  Brush with melted butter before baking.  Bake at 375 for 8-10 minutes or until golden brown.
