Homemade Hot Pockets

I have to admit sometimes my kids can be a real pain to feed!  If one of them likes something it's guaranteed that another one hates it.  It's hard to find something that will please everyone but this usually works.  The kids think these are fun to make and they can pick whatever meat and cheese combination they want.  Sometimes we have put our favorite pizza toppings inside too.  They are pretty easy and a lot better than the ones you buy in the store.  I believe the one in the picture was turkey and provolone. 



Ingredients:



Meat of your choice (roast beef, turkey, ham)
Cheese of your choice (cheddar, provolone, Swiss)
Melted butter

Bread dough:

1 c lukewarm water
2 tbsp softened butter
1 egg
3 1/4 c flour
1/4 c sugar
1 tsp salt
1 tbsp yeast

Dissolve yeast in water and set aside.  Mix butter, egg, salt, and sugar.  Add yeast mixture and mix well.  Add flour a little at a time.  Knead for 10 minutes and let rise until double.  (Or you can simply toss it all in your bread machine and let it do the work for you).

Divide the dough into 8-10 balls.  Roll each ball into a rectangle.  Place meat and cheese on one side and fold in half sealing the edges.  Place on a cookie sheet and allow to rise for 20-30 minutes.  Brush with melted butter before baking.  Bake at 375 for 8-10 minutes or until golden brown.
